Maasuni – Fresh fish simmered in salt

 

Maasu means salt in Okinawan dialect. Maasuni is a traditional Okinawan dish of fish cooked with just salt and awamori. With this recipe, I added olive oil, parsley and mini tomatoes to give a bit of western flavor to it.

The fish in the picture is Taman, but any white fish can be used instead.

Ingredients

  • White fish – the one I used is called Taman/タマン(Blue emperor)
  • 1 tsp Okinawa sea salt
  • 1 tbs awamori
  • 2 tsp olive oil
  • 6 mini tomatoes
  • 1/2 tsp dried parsley
  • 1 cup water

Directions

1. Mix 1 cup of water, salt and awamori in a pan and bring it to a boil.

2. Add the fish and cook on medium heat. Once the soup has started to boil again, pour some of it over the fish using a spoon, then put a lid on and cook for 5 minutes.

3. Add mini tomatoes, olive oil and parsley, and cook for another 5 minutes on low heat.
