Umukuji Tempura – Purple Sweet Potato Tempura

This is one of the ways locals eat purple sweet potato for a snack. My local area, Yomitan village, is famous for producing purple sweet potatoes that don’t just have a beautiful color, but are rich in vitamins A and C, and contain many minerals, such as potassium.

Ingredients

Ingredients are simple enough and available at any local supermarket.

(Making about 15)

3 purple sweet potatoes

• ½ cup of tapioca flour

• 3 tablespoons sugar

 

 

Directions

After cooking and cooling the sweet potatoes, smash them.

1. Wash the purple sweet potatoes and steam until cooked. They are ready when you can easily push a toothpick or bamboo stick into them.

2. Once the sweet potatoes have cooled down, mash them in a bowl and add tapioca flour and sugar, and mix well.

3. If the dough is too dry, add some water to make it smooth so that you can make small disc-shaped balls. If the dough falls apart, it is too dry, and if it sticks to your hands you’ve added too much water.

Make sure the dough is not too dry or wet.

3. Make the dough into small plump discs.  The original recipe for Umukuji Tempura is to deep fry the dough ‘discs’, but as this requires a lot of oil, I cook them in a pan with a bit of vegetable oil. The dough will soak up the oil so add some between batches.
