Eggplant and miso

Japanese people use miso for all kinds of dishes other than miso soup. This is one of my favorite dishes, which uses miso and sweet sake, mirin. This recipe uses only vegetables but if you would like, you can add chicken or pork. The miso taste really goes well with rice so, if you can, please enjoy this dish with white steamed rice.

Ingredients

• 2 eggplants

• 1 to 2 bell peppers

• 2 tablespoons miso

• 1 tablespoon sweet sake mirin

• 1 tablespoon vegetable oil

 

Directions

Miso is an excellent ingredient that can be used with almost any Japanese food whether they include only vegetables or also meat oe chicken.

1. Cut the eggplants and bell peppers into big chunks.

2. Mix the miso and sweet sake well in a small bowl,

3. Heat the oil in a pan and fry the eggplant chunks. To make them soft, they need to be mixed well with the oil. Once they have soaked up the oil and are soft, add the bell peppers and cook a few minutes more.

4. Once the vegetables are cooked, add the mix of miso and mirin mix into the pan.

5. Mix well and cook for about 5 minutes. If you find the sauce is too salty or the ingredients remain dry, you can add a little water.
