Misomayo salada – Miso paste and mayonnaise salad dressing
Do you think miso paste is just to make miso soup? You can use miso paste for many different dishes and this is one example. If you like Japanese goma (sesame) dressing, you might like this one too! If you have miso paste in your fridge (waiting to be used to make miso soup once in a while), please try this one.
Ingredients
Dressing
- 2 tbs miso paste
- 2 tbs mayonnaise
- 1 tbs mirin (sweet sake)
Vegetables and seafood salad. This time I used:
- 1 broccoli
- ½ onion
- 1 avocado, peeled and cut into bite-size pieces
- 8-10 boiled prawns
- 1 tsp vinegar
Directions
1. Cut the broccoli into easy-to-eat sizes and wash. Boil plenty of water and add a pinch of salt in a saucepan. Boil the broccoli for one to two minutes and drain water with a sieve.
2. Slice onion very thin. Place the sliced onion in a bowl, and add a pinch of salt. Mix well and leave until it becomes soft, wash and squeeze water out.
3. Using a toothpick or tip of a small knife, expose and pull out the vein from the prawns by making an incision either down the back or along the belly.
4. Bring water to a boil in a saucepan, add vinegar and poach the prawns for 3 to 5 minutes depending on the size. Take out and let them cool down.
5. Mix miso paste, mayonnaise and mirin in a bowl.
6. Place all vegetables and prawns in a salad bowl,. Pour miso dressing on the top.
