Chilled somen noodles
(for 4 people)
- 8 bundles somen noodles
- Mentsuyu for seasoning
- Sliced ham
- 2 eggs
- 4 crab sticks
- 1/2 cucumber
- Boil somen noodles 1 to 2 minutes.
- Drain the somen in a colander and cool down with running water.
- Mix the eggs slightly to break the yolks, make and fry a thin omelet and slice them, ham, and cucumber into thin strips, rip the crab sticks by hand.
- Put somen on a plate and spread the strips for topping. Pour mentsuyu over the dish before serving.
Noodles served cold with sliced green onion, wasabi and seasoning are called Hiyashicyuka. Summer vegetables like eggplant and okra also make a good topping.
If Mentuyu seasoning tastes too strong, you can dilute it with cold water to match your taste.
