Yushi Dofu (Okinawan Tofu Soup)
- 1 pack Soybean milk (unhomogenized)
- 50ml brine
- 200ml water
- 1 tsp salt
How to cook
1. Mix water and brine together.
2. Add soybean milk to a pot and cook until just before it boils, stirring the milk to avoid overcooking/burning.
3. Turn off the fire and swirl the milk with a ladle making it whirl.
4. Add brine water and salt on top of the milk whirl, and let it mix on its own.
5. Lid the pot and let stand for 15 minutes, and you are done.
